Almond Brittle (Indian Chikki) Recipe by Manjula


Today I will be making almond brittle also known as chikki in India. This old fashioned crunchy and nutty brittle is easy to make. This recipe will make about 12 oz of almond brittle. For this recipe we need: 1 cup of sugar 1/2 cup of sliced almonds 1 tablespoons of roasted sesame seeds 1/8 teaspoon of salt And 2 tablespoons of butter Almond brittle is a very easy recipe to make. First I will caramelize the sugar and then add the almonds and sesame seeds. Mix it well. And then pour over the greased cookie sheet. Wait till it cools off and then break into the pieces. Heat is on, medium high. Add the butter. And wait till butter has melted, before we add the sugar. Butter is melted. Now I will add the sugar. And salt. Keep stirring this continuously, till the sugar is melted and gets caramelized light golden brown color. And this should take about 4-5 minutes. This has been about a minute. And as you see in the bottom it has started melting and it should take about 3 more minutes. So it has been about 2 minutes, since I have started. And it is melting. And it should take another 2 minutes. But do keep stirring otherwise this burn very quick. Sugar has melted. And as you see it has caught really nice color. And it’s time to turn off the heat. And add the almonds. This was about 4 minutes. I have turned off the heat. Add the almonds. Mix it well. And now we are going to pour this over the greased plate. I have already greased the plate generously. So this part you have to do it very quick. And just spread. While it is hot, it spreads really well. So as you see this was very very easy to make. The cooking time was about 5 minutes. I have spreaded thin. I like it that way. And now wait till it cools off. This should take about 10-15 minutes. Before you break it this should be really at room temperature. This has come to the room temperature. Now I will pick up and just break them in pieces. Cracking really well. Almond brittles are looking tasty and crunchy. Homemade candy. I know my grandkids will enjoy this. These brittles makes a delicious homemade gift. Pack it in jars or in candy bags. Thank you. Enjoy.
